Can we be well fed but malnourished?

My name is Sandrine Hahn and I founded and lead Nourishing Our Children, a non-profit, educational initiative of the San Francisco Chapter of the Weston A. Price Foundation.  We teach timeless principles for supporting learning, behavior and health through optimal nutrition.

On our website, we ask, “Can we be well fed but malnourished?” The answer is yes.

That is one of the reasons I support the Farm-to-Consumer Legal Defense Fund . . . to ensure that we have the food necessary to nourish ourselves and our children!

Nutrient Density

The farmers and ranchers that the Fund defends are engaged in practices that ensure our food is nutrient dense, meaning it contains high levels of vitamins and minerals.

As an example, let us take a look at Vitamins A and D as discussed in our presentation. They are crucial for numerous processes in the body. These are the sources of vitamins A and D: butter and cream, fish, shellfish, liver, organ meats, insects, fish eggs, fish liver oils (such as cod liver oil), the fat of birds, such as ducks and geese and the fat of mono-gastric animals – meaning one stomach, such as the pig.  What do you notice about this list? These foods are all animal foods, and all the high-fat, high-cholesterol foods that we’re commonly told not to eat.

What is relevant about this in regard to the Fund, is that these vitamins, A and D, will not be in eggs, butter, cream, organ meats and the fat of birds and pigs unless these animals are on pasture, in the sunlight and eating green grass. As soon as animals are put in confinement, and given hay and dry feed, vitamins A and D disappear from the butterfat, and the levels begin to decline in the organ meats and eggs. The Fund only defends farmers who raise their animals on pasture — humanely, and sustainably.

In search of healthy population groups, Dr. Weston A. Price traveled to remote parts of the world in the 1930’s.  Perhaps the most important thing that he discovered was that traditional diets were much more nutrient dense than ours is.

Dr. Price analyzed the foods of these people in his laboratory. He found that traditional diets contained high levels of minerals — at least 4 times the calcium and other minerals compared to the American diet of his day. This is why organic farming is so important, that is, farming that puts an emphasis on putting nutrients back into the soil. If the minerals are not in the soil, they will not be in the food.

Cow GrazingThe most surprising finding of Dr. Price was the very high levels of fat-soluble vitamins, meaning vitamins A and vitamin D, in the diets of healthy traditional peoples. These diets contained 10 or more times the levels of vitamins A and D than the American diet of his day. Today there would be an even greater disparity as many Americans avoid the foods that contain these nutrients.

Nourishing Our Children teaches about the importance of vitamins A and D, and we are highly motivated to ensure that food with high levels continues to be available to all of us.

Last year, I approached Cathy Raymond to offer the Nourishing Our Children educational materials as an incentive for folks to become members of the Farm-to-Consumer Legal Defense Fund.  We offered to give all of our downloadable educational materials as an appreciation gift to those who became members and the movie files of our DVD to those who donated $25.00.

The response during this 2 week promotional period was overwhelming!  We we gave away over $20,000 worth of our educational materials and raised over $10,000 for the Fund.

Why did I offer to do this at a time when we had not yet recuperated our own investment in creating these materials?  Because without the farmers and ranchers who provide the nutrient-dense, sacred foods we recommend – we’d all likely be malnourished.
